This salmon recipe is perfect for celebrating the summer air. The flavor of the mint and lemon brings a zest of energy.

Whole-Wheat Farfalle with Salmon and Mint

Prep time: 10 mins Cook time: 20 mins Total time: 30 mins


  • 12 oz farfalle pasta
  • 1 Tbsp butter
  • 1 large leek
  • 1¼ cup reduced sodium chicken broth
  • ¼ tsp salt and pepper
  • 8 oz skinless salmon fillet (¾ to 1 inch thick)
  • 2 tsp grated lemon zest
  • ½ cup reduced fat sour cream
  • ½ cup sliced mint
  • Carrots


  1. Grate the carrots and set aside until serving.
  2. Cook the pasta according to the directions on packaging.
  3. Melt butter in a 12-inch nonstick skillet over medium heat.
  4. Cut the leek in half lengthwise (only the white and light green part). Thinly slice crosswise the two halves.
  5. Add leek, ½ cup of the broth, salt and pepper to pasta and simmer for 1 minute.
  6. Place salmon on top of leeks and cook covered over medium heat for 5 minutes or until leeks are tender and salmon is cooked.
  7. Remove salmon to a plate and set aside
  8. Add remaining ¾ cup broth and lemon zest to the pan and bring to a simmer.
  9. Break up salmon and add to drained pasta in cooking pot.
  10. Add leek mixture, sour cream, mint and toss to mix.
  11. Serve immediately with the carrots on the side.
  12. Enjoy!
