I was just making some ground turkey muffins for my brother and thought I would share why we only use turkey in replacement for beef. My family only eats ground turkey, turkey burgers, turkey hotdogs and turkey lunch meat. By now, you think that we would be gobblin’.

When my husband and I first got married, I convinced him to try ground turkey and we have been forever hooked. Not only does turkey have and hold better flavor, but it (usually) has less fat! Now don’t be fooled thinking that all turkey has less fat than beef. Make sure you choose the lowest fat-to-lean-meat ratio. Did you know that beef is higher in saturated fat than turkey, which raises your risk of heart disease? Granted beef has more iron than turkey, so that is why we make sure we take our daily vitamins. Turkey actually contains a higher percentage of lean protein which is import to healthy growth of your muscles, hair, nails, and cells. It also provides your body with energy and aids in healthy growth and development among children!

I would like to share the recipe I made for my brother tonight. It is from Bodybuilding.com.  It is amazing and only 80 calories per 2 muffins!!! SO YUMMO! This is coming from a lady who HATED meatloaf growing up!

    • 2 lbs ground turkey
    • egg whites
    • 1 cup quick cooking oats
    • 1/2 tsp ground cumin
    • 1/2 tsp dried thyme
    • 2 tsp dry yellow mustard
    • 2 tsp black pepper
    • 2 tsp chipotle pepper spice
    • 1 tsp salt
    • 2 tbsp garlic powder (2 cloves minced)
    • 1 small onion (finely chopped)
    • celery stalks (finely chopped)
    1. Preheat oven to 375 degrees.
    1. Spray muffin pan with canola or olive oil
    1. Mix all your ingredients together in one large bowl.
    1. Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetball.
    1. Bake for 40 minutes.

Makes 12 muffins.

Serving Size:
Women: 2 muffins
Men: 4 muffins
