The trick to making a healthy breading for your protein is using a fiber or bran cereal. I used a bran cereal, spiced it up with some chili powder and sweet red chili sauce, then topped it off with zesty lemon for a well rounded salmon bake. I recommend eating this with my Skinny Coconut Rice for a Thai inspired dinner!
