So, of course I WOULD have to face a diet hurdle in my first week of the challenge.  A wedding, but I think I did pretty well. I’m sure my dinner was not as “perfect” as if I were to cook at home, but I used the tools that have been given to me and figured out what to eat.  I was the lady in the buffet line filling her entire plate with salad and picking out the chicken from the chicken parmesan dish to top it with.  Surely it was not as “wedding” as the garlic mashed potatoes, creamy alfredo, and sour dough rolls – but after all was said and done, I felt much better at the end of the night, and honestly – quite proud of my willpower.  OH – and I only had one (ok, maybe two) bites of Billy’s piece of wedding cake.

So far, the hardest thing about the diet for me is “dinner” planning.  The first five “meals” of the day are just for me – but for dinner, someone else is going to have to eat what I come up with (Billy is not picky, but triscuts with pepperoni slices will probably be frowned upon if they are a nightly occurrence).   I’ve found a few great websites with healthy recipes and I came across this one last week that we both really liked:

Taco Stuffed Peppers

2 large green peppers, halved lengthwise and seeded, 6 ounces each
1 pound ground beef
2 teaspoons Seasoning for Tacos
1 tablespoon salsa
4 ounces cheddar cheese, shredded
2 tablespoons sour cream, for topping

Parboil the peppers in boiling water for 3 minutes; drain. Meanwhile, brown the meat; drain the fat and mix with all but the sour cream. Fill the peppers and arrange them in a baking dish. Bake at 350º 20-25 minutes or microwave, until hot and bubbly. Serve topped with sour cream.  Makes 4 servings
