Not only are these Skinny Mini Banana Bread Muffins delicious, but they are low calorie and filling! We had some additional toppings like almonds, pecans, raisins, chocolate granola, and dark chocolate chips in the Skinny Mom pantry so we decided to top each mini muffin with 1-2 pieces and they turned out great! Feel free to experiment with whatever toppings you have on hand. The serving size is 4 mini muffins and I calculated the nutrition info without the additional toppings, so make sure to add in a few extra calories for each topping that you choose.
