Skinny Mediterranean Pasta

Cook time: 10-15 minutes

Yield: 4 servings

Serving size: 1/4 of dish


  • 8 oz whole grain penne pasta
  • 2 — 14 oz cans diced tomatoes with Italian seasoning
  • 1 onion, finely chopped
  • 3 cup fresh spinach
  • 4 oz reduced-fat tomato and herb feta cheese crumbles
  • 1 Tbsp olive oil
  • 5-6 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper


  1. Boil a large pot of salted water and add pasta. Cook according to package directions.
  2. Heat a little olive oil in a skillet over medium heat.
  3. Add onions and garlic and cook until tender.
  4. Add spinach and cook until wilted.
  5. Add tomatoes.
  6. Once tomatoes are heated through add drained pasta, salt,pepper and 2 oz crumbled feta.
  7. Serve topped with remaining feta.
