Eggnog is one of my favorite flavors around the holidays, but cream, sugar, whipped eggs and rum don’t exactly fit into my diet! And, well, neither do cupcakes really! Let this recipe be the exception to my rules! These cupcakes are as delicious as they look, and best of all, a couple of these won’t throw off your diet like so many other Christmas treats can! Rum extract and nutmeg add so much flavor while Greek yogurt and egg whites save the day as a couple of festive skinny swaps. Recipe: Skinny Eggnog Cupcakes

Prep time: 10 minutes + 10 minutes for decorating

Cook time: 15-20 minutes

Yield: 24 servings

Serving size: 1 cupcake

Ingredients

    Cupcakes
  • 1 (16.5-ounce) package yellow cake mix
  • ¾ cup plain, nonfat Greek yogurt
  • 1 cup water
  • 3 egg whites
  • 2 teaspoons ground nutmeg
  • Topping:
  • 1 (8-ounce) container light whipped topping, thawed
  • 1 tablespoon rum extract
  • 1 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F, and line two 12-count muffin tins with paper liners.
  2. In a stand mixer (or in a large mixing bowl with an electric mixer) beat all of the cupcake ingredients until smooth.
  3. Pour the batter into the prepared muffin tins and bake for 15-20 minutes, or until done.
  4. While the cupcakes are baking, prepare the topping: In a large mixing bowl stir together the whipped topping and rum extract.
  5. When the cupcakes have completely cooled, spread the topping on each and sprinkle the ground nutmeg on each to garnish.
