I LOVE to play around with ingredients in the kitchen. Sometimes things turn out great…other times, not so much! I just need to remember to write down the ones that are hits so I can make them again. These “Curried Cauliflower Bites” were a hit and thankfully I wrote it all down for you!! Oh and I almost forgot to mention the BEST part — they are only 16 calories each!

Skinny Curried Cauliflower Bites

Prep time: 15 minutes

Cook time: 30 minutes

Yield: 32 servings

Serving size: 5 cauliflower bites

Ingredients

  • 1 large head cauliflower
  • ¼ cup egg whites
  • 1 cup non-fat, plain Greek yogurt
  • 1 Tbsp curry powder
  • ¼ tsp ginger powder
  • 1 Tbsp coconut oil

Instructions

  1. Preheat your oven to 450 degrees.
  2. Line cookie sheet with parchment paper.
  3. Wash, dry and grate cauliflower using a food processor (to the consistency of rice).
  4. In a skillet lightly coated with nonstick cooking spray, stir fry the “cauliflower rice” until the cauliflower is slightly translucent.
  5. Place in a bowl and let cool.
  6. Place all other ingredients in the food processor and blend until smooth.
  7. In a bowl, combine the “cauliflower rice” and blended ingredients. Mix completely.
  8. Drop by spoonfuls or cookie baller onto parchment paper.
  9. Place in preheated oven and bake for 25-30 minutes.
  10. Once golden brown, remove from the oven and let cool.
