Anyone who knows me well enough, knows that I love love sprinkles!  I love the bright colors and how happy they make me feel when I see them.  I am always taken back to memories of my childhood when my family would go out for ice cream and I would always order a scoop of chocolate ice cream with extra sprinkles.

So it is not surprise that when given the opportunity to use sprinkles in a dessert recipe, I am all over it!  I came up with this Chocolate Funfetti Cookie recipe by using a box of chocolate cake mix as the base.  This is quickly becoming a favorite recipe of mine as I think it is the perfect dessert combination…chocolate and sprinkles!

Skinny Chocolate Funfetti Cookies

Yield: 30 cookies

  • 1 box Pillsbury chocolate cake mix, dry mix only
  • 1 6 ounce container Dannon Coffee flavored yogurt
  • 2 egg whites
  • 1 tsp baking powder
  • 1/2 cup sprinkles

  1. Preheat oven to 350 degrees.
  2. Spray two large cookie sheets with non-stick cooking spray.
  3. In a large bowl, mix together dry cake mix and baking powder.
  4. Next, add Dannon coffee flavored yogurt and egg whites to dry cake ingredients and mix well. Don't worry as mixture will be very thick.
  5. Next, add in about 1/4 cup of sprinkles, reserving the additional 1/4 cup to be used later. Stir sprinkles into mixture.
  6. Spoon mixture onto cookie sheet making small 1.5-2 inch balls. Using the back of the spoon gently flatten cookie balls to form a cookie. Top unbaked cookies with the remaining sprinkles.
  7. Bake cookies in the oven for 10 minutes and remove from heat. Allow cookies to cool completely as the cookies will be very soft but will harden as they cool. Enjoy!
