This salmon recipe has become one of our favorites. Plus, it’s easy to prepare, which is always a plus as a busy mama! The trick to this dish is coating the salmon completely with the Fiber One® cereal and blackened seasoning. It gives the salmon a sweet and spicy taste with a great texture! Try pairing this with our Skinny French Country Salad (our adaptation of the Cheesecake Factory® favorite and maybe the best salad recipe ever!)

Skinny Blackened Salmon

Prep Time: 10 minutes

Cook Time: 25 minutes

Yield: 4 Servings

Serving Size: 4 oz

Ingredients

  • Four, 4-ounce fresh salmon fillets
  • 1 tablespoon Cajun seasoning or blackened seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • 1 cup Fiber One® Honey Clusters cereal (we like this brand because of the sweetness it adds)

Instructions

  1. Preheat oven to 350º F.
  2. Line a baking sheet with parchment paper, this will make for easy clean-up.
  3. In a food processor, blend Fiber One® Honey Clusters until crushed to a bread crumb like consistency.
  4. Add in salt, pepper and Cajun or blackened seasoning to crushed Fiber One® Honey Cluster cereal.
  5. Dip salmon into seasoning and press seasoning onto salmon until the salmon is completely covered with seasoning mixture.
  6. Place salmon on baking sheet skin side down.
  7. Bake for 20-25 minutes.
