Nichole is a busy mom who recently quit her job to stay at home for her 5-year-old daughter. She babysits for her family, and at times, is watching up to 7 kids a day! With her day starting around 5 a.m. and not ending until 8-10 p.m., constantly surrounded by kiddos, she wanted to know some healthy breakfast and lunch options.

Skinny Sausage and Egg McMuffin
Dear Nichole,

I definitely understand the chaos of watching kids and trying to eat your own healthy meals instead of the leftover chicken nuggets your children half-devoured!

Don’t give up on your weight loss journey before it has even begun. Most people think it only happens in the gym, but the first place you will have to put work in is the kitchen! You can eat through any workout. Here are some great Skinny Mom Meals to fill you up without filling you out:

Low-Fat Blueberry Scones

Skinny Swap Sausage and Egg McMuffin

Skinny Pepper and Onion Frittata

Chocolate and Banana Protein Smoothie

Skinny Buffalo Chicken Wraps

Philly Cheese Turkey Sloppy Joes

Skinny Grilled Fruit and Chicken Salad

Bang Bang Shrimp Pasta

But, I will also suggest buying a heart rate monitor (they have good ones everywhere from Target to Walmart…you don’t necessarily have to break the bank). This will help you track how many calories you’re burning during your workouts, especially if you are relying on videos and Xbox programs! Plus, it will give you an idea of what kind of workout zone you are in: cardio, fat-burning, etc. The key is mixing cardio with strength training.

As I’m sure you have learned watching all those kids, it’s all about balance. Hopefully these recipes will kickstart your lifestyle makeover! You got this Nichole and Skinny Mom’s community is your new support system!
