PB Banana Stuffed Flatout French Toast

During the colder months, most of us crave our favorite comfort foods that we had growing up. The problem is that most of those recipes were not only time-consuming to make, but also full of unnecessary fat and calories! As an adult, comfort foods remain near and dear to my heart, although I have grown to both prefer and enjoy healthier versions of my favorite childhood meals.

Some of my favorite memories involve eating French toast for breakfast with my family on Sunday mornings, still cozy in my pajamas! Of course, it was one of those fat-laden, caloric recipes, as my French toast was usually soaked in whole milk and fried in butter! Not only that, but such a meal is very low in metabolism-revving protein, yet high in simple carbohydrates which left me hungry and lethargic soon after eating. Not anymore!

I have recently become a fan of the Flatout Foldit® flatbreads, which is a Hungry Girl exclusive, and am sold on making my favorite childhood breakfast not only delicious, but healthy! Full of protein and satisfying fiber, this flatbread is also low in carbohydrates, fat and sugar! PB Banana-Stuffed Flatout Foldit® French Toast


  • 2 Flatout Foldit® 100% Whole Wheat flatbreads with Flax
  • ¼ cup natural peanut butter with honey
  • 1 small banana
  • 2 large eggs
  • ⅓ cup unsweetened coconut milk (or milk of choice)
  • 1 Tbsp stevia
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 Tbsp coconut oil
  • *Optional toppings: chopped nuts, jam, maple syrup, chocolate chips, granola, berries, Greek yogurt, powdered sugar


  1. Slice banana and set aside.
  2. In shallow bowl, whisk together eggs, unsweetened coconut milk, stevia, vanilla extract, and cinnamon. Set aside.
  3. Spread two tablespoons of peanut butter on each flatbread, ensuring to cover both sides adequately. Top each flatbread with half of sliced banana. Fold flatbread together and gently press down to ensure flatbread stays securely sandwiched during the cooking process.
  4. In a large skillet, heat the coconut oil over medium heat until melted and begins to sizzle.
  5. Dip both sides of the flatbread sandwiches in the egg mixture and place in the hot skillet. Cook for 3-4 minutes, then flip flatbread and cook on the opposite side for another 3-4 minutes, or until golden brown.
  6. Remove flatbread sandwiches from pan and place on serving dish. Top with desired ingredients or eat alone (I topped mine with powdered sugar).
