Fourth of July meals always consists of the best and brightest desserts. But, some of those desserts take tons of time! No worries, ladies, I have the perfect solution. This icebox cake is super festive and super quick to make. It takes about 15 minutes to make, it’s not complicated and once you’re done you pop it in the fridge! You can make this beautiful dish the day of your party, but be cautious…The cake needs 4-5 hours to refrigerate.

Very Berry Ice Box Cake

  • 1 lb fresh strawberries, sliced thinly
  • 1 lb fresh blueberries
  • 12 oz Cool Whip® Free topping (1½ containers)
  • 26-28 reduced-fat graham crackers
  • ¼ cup dark chocolate chip morsels


  1. Using a 9x13 pan or glass dish, spread a small spoonful of Cool Whip® Free topping evenly to cover.
  2. Lay down 6 graham crackers to cover the Cool Whip® Free layer. To completely cover the layer, break one cracker into smaller pieces to fit on the sides.
  3. Lightly cover the top of the graham crackers with another layer of Cool Whip® Free topping.
  4. Top the Cool Whip® Free evenly with a single layer of sliced strawberries.
  5. Repeat with the Cool Whip Free and the graham crackers.
  6. Top the graham crackers with Cool Whip® Free and then add a thin layer of blueberries on top of the Cool Whip® Free.
  7. Repeat two additional times with the layers using strawberries and then blueberries.
  8. At the last layer, spread the top with Cool Whip® Free. Add a few strawberries and blueberries to the top.
  9. In a small bowl, microwave dark chocolate chips until melted.
  10. Add melted dark chocolate chips to a plastic bag and cut the corner slightly to make a piping bag.
  11. Using the plastic bag as a piping bag, drizzle the dark chocolate over the top layer.
  12. Refrigerate cake for 4-5 hours before serving.
