Mmmmmm sweet potatoes – another one of my FAVORITE foods!! Topped with cottage cheese and a tbsp or two of raw pumpkin seeds – this meal has the perfect combination of carbs/proteins and fats and keeps my belly happy for hours. 🙂


1.  1 sweet potato, scrubbed clean

2.  cook in oven or microwave until done

3. cut in half and mash with fork

4. fill with 1/3 -1/2 cup of 1% cottage cheese

5. top with 1 -2 tbsp of raw pumpkin seeds

6. Sprinkle with pepper
