When I was recently introduced to Fitnessista, I knew I liked the blog right away. The author, Gina is a wife, mom, fitness instructor, and she loves to eat. What’s not to like? (Oh, and she makes her own almond milk. Impressive.) However, when I had the opportunity to give one of her quick recipes a try this week – I decided I loved Fitnessista.
We all know (and if you don’t, pay close attention to the skinny) that kale is an amazing food. If it isn’t in your diet, you should add it. It is high in antioxidants, iron, vitamin K, vitamin A, vitamin C, and calcium to just name a few little incentives to grab some on your next supermarket sprint.
I have to admit though – besides throwing a handful in a smoothie, I often am stumped on how to integrate more kale in our meals. Baked kale chip recipes have been rampant on the internet lately. My little guy even loves the crispy leaves once they are baked and sprinkled with a bit of salt and grated Parmesan. From there, I have been left stumped on kale chip varieties…until now.
This past week Fitnessista introduced me to Spicy Almond Kale Chips and can we all take a moment and say in unison, “Yu-UM.” The sesame oil/almond butter/soy sauce base is a salivating combination of bold flavor that I can’t even begin to describe adequately. So, go try it!
