Recipe: No-Bake Elli Quark Cheesecake

Prep time: 10 minutes

Cook time: None

Yield: 1 serving

Serving size: 1 crust + 1 (6-ounce) Elli Quark cup


  • ¼ cup raw walnuts
  • 4 dried, pitted dates
  • 1 (6-ounce) Elli Quark cup of your choice


  1. To make the crust, add the walnuts and the dates to the bowl of a food processor.
  2. Process for 1 to 2 minutes, or until ground to a coarse crumble. The crust should stay together when pinched with your fingers.
  3. Empty the crumbles into a small, ungreased ramekin and press firmly to adhere to the bottom and sides. Make sure the crust is even all around.
  4. Fill the crust with your desired Elli Quark flavor and toppings.
  5. Enjoy immediately, or refrigerate to enjoy later.
