The Squeaky Gourmet is more than just another diet book; it’s also more than just another recipe book. This book is based on the concept of healthier eating versus dieting and the belief that calories in versus calories out makes more sense than avoiding carbs the rest of your life. The authors Maureen (Moe) Jeanson and Jamie Wilson offer a plan that will not only help you shed those extra pounds, but will leave you and your family rubbing their bellies with that “yummy” sensation! Moe Jeanson can personally testify to the plan’s benefits. Not only did she co-write the book, but she lost and has maintained a loss of 100 pounds because of this way of eating.

Jeanson claims, “I wanted to give people the right information about how to eat healthy and eat clean. With so much information out there in the diet and fitness world it can be really confusing. The Squeaky Gourmet is what people should have been looking for all the time. It’s a concept of clean eating; no artificial sweeteners, low fat, and we list the nutrition and calorie contents of every recipe so you know exactly what you’re eating and how many calories it has per serving.” Jeanson added that when seeking out a good nutrition plan, it really should be about healthy versus just “fast”.

Serves 3 (4 muffins per serving)
- 1 ½ cup old fashioned oats
- 1 cup applesauce
- 1 cup blueberries
- 3 eggs
- 4 egg whites
- 1 teaspoon cinnamon
Mix everything in a bowl and let it sit for 15 to 20 minutes to let the oats swell a little. Preheat oven to 400 degrees. Spray regular size muffin tin with no-stick spray or better yet use a no stick tin. Fill holes almost full as these don’t rise much at all. Cook for 25 minutes. If you want the tops browned, put under the broiler for a minute or less. Voila! This makes 12 muffins which is 3 servings.
