When I first heard of Cauliflower Crust Pepperoni Pizza, two thoughts came to my mind, the first being that it sounds impossible to make cauliflower into pizza, and the second being that there is no way that this could taste good. I was wrong on both counts! Turning cauliflower into pizza dough proved to be pretty easy and it tasted so much like real pizza, it was delicious! I will be making this recipe again and I plan to experiment with the toppings and the sauces. Enjoy and let me know what you think!

Cauliflower Crust Pepperoni Pizza

Prep time: 25 minutes

Cook time: 25-30 minutes

Yield: 6 servings

Serving size: 1 slice


  • 6 oz tomato paste
  • 6 oz water
  • 1 tsp minced garlic
  • 1 tsp basil
  • 1 tsp oregano
  • ½ tsp salt
  • ½ tsp onion powder
  • 1 tsp stevia (or your favorite sweetener)
  • Pizza:
  • 2 cups uncooked frozen cauliflower (you can use fresh, but I used frozen)
  • 2 cups low moisture, part-skim, shredded Mozzarella cheese, divided
  • 1 egg
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ cup turkey pepperoni
  • Other:
  • cheesecloth


  1. Mix all ingredients in a medium size bowl using a whisk or spoon.
  2. Refrigerate sauce for 10-15 minutes before using to allow ingredients to blend.
  3. Pizza:
  4. Preheat oven to 450 degrees.
  5. While sauce is in the fridge, microwave cauliflower for 8-10 minutes until cooked through.
  6. Place cauliflower in a food processor and pulse until it is like the consistency of rice. Make certain to not over-pulse, as it will be harder to spread.
  7. Place pulsed cauliflower in a bowl lined with cheesecloth.
  8. Holding by the four corners of cheesecloth with one hand, squeeze out the liquid as much as you can with other hand. The cauliflower at this point should be dry.
  9. Transfer cauliflower to a bowl and add 1 cup of Mozzarella and one egg — mix well.
  10. Add oregano, basil, garlic powder, salt and pepper to cauliflower and cheese mixture.
  11. Place a piece of parchment paper onto a baking sheet.
  12. Heavily coat parchment paper with nonstick cooking spray. (You can not use aluminum foil or wax paper, as the cauliflower will stick to pan).
  13. Spread cauliflower onto parchment paper. I start by spooning large amounts of cauliflower on the outside of the pan and working my way to the inside.
  14. Make sure to spread the cauliflower mixture as thin as possible.
  15. You now have your pizza dough.
  16. Bake the dough in oven for 20-22 minutes until the dough is golden brown and bubbly.
  17. Remove crust from the oven and turn oven onto Broil.
  18. Spread sauce over crust and sprinkle 1 cup of remaining Mozzarella cheese over pizza top and cover with turkey pepperoni.
  19. Place baking sheet back in the oven under the broiler and broil (with the oven door cracked) for 3-5 minutes.
