If you are craving a veggie burger, but are tired of the usual black bean burger, give this remixed classic a try. The Mediterranean infusion of garbanzo beans, olives, feta and some garlic for an extra kick is like a Greek salad…but even better because a) it’s a burger and b) it’s between two delicious pieces of bread. Take a little Greek vacation in under an hour– prep time is about 32 minutes and the cook time takes 12 minutes, even a little less depending on your skillet-master skills. Big Fat Greek Veggie Burger

Serving size: 1 burger

Ingredients

    For Patties:
  • 14 oz can garbanzo beans, drained + rinsed
  • ½ cup fresh spinach, chopped
  • 2 Tbsp Kalamata olives, pitted + chopped
  • ⅓ cup Feta cheese or non-dairy cheese (i.e. Daiya mozzarella shreds)
  • 1 organic egg or flax egg (1 Tbsp ground flax + 3 Tbsp water, whisked)
  • ½ cup gluten-free oat flour (or make your own by finely grinding gluten-free oats)
  • 2 tsp lemon juice
  • 1 tsp minced garlic
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 4 split burger buns or lettuce leaves for serving
  • For the Greek Sauce:
  • ½ cup organic or non-dairy mayonnaise (i.e. Vegenaise)
  • ¼ cup organic or non-dairy plain yogurt
  • ¼ cup feta cheese or non-dairy cheese (i.e. Daiya mozzarella shreds)
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Using a potato masher or a fork, mash beans until slightly smooth, but still chunky. Add spinach, olives, cheese and egg of your choice, oat flour, lemon juice, garlic, oregano, salt and pepper. Using your hands, combine thoroughly.
  2. Chill dough for 30 minutes.
  3. Form dough into four separate patties. Place a skillet that has been spritzed with nonstick cooking spray over medium to medium high heat. Cook patties for 10-12 minutes, gently flipping once during cooking, until browned on both sides.
  4. For Greek Sauce:
  5. Combine mayo, yogurt and cheese of your choice, salt and pepper.
  6. Serve burgers on top of buns or lettuce leaves, slathered with Greek sauce and trimmed with the toppings of your choice.
