Desperate times call for desperate measures–one of the worst mottos to adopt when you are hungry! Fight the urge to grab a bag of chips or chocolates (or chocolate chips) and test out one of these super quick microwaveable snacks. We have both savory and sweet options to tickle your tastebuds into submission. I know many people who refuse to microwave some of these foods, but if you are willing to try something new, I think you’ll love these ideas!
Check out these 7 secret snack busters that can be made in a mug:
Coffee Cup Quiche from St. Louis Post Dispatch: The perfect portion of quiche for 200 calories! You can even sub the ham out for turkey sausage, use egg substitute, a whole wheat bagel or use nonfat cream cheese to drive the calorie count down. But, every once in a while it is nice to simply indulge–especially if it’s measured out to a single serving!
Instant Mug o’ Mac & Cheese from Babble: Shocking right? Probably not. Mac n’ cheese is already easy to make as it is in the classic box form. The great thing about this recipe is that it prevents you from over eating! It’s one serving for a quick bite. Again, you can use some swaps here. Choose a wheat noodle and use less cheese or nonfat cheese. However, nonfat cheese does take some time to melt.
Coffee Cup Chilaquiles from St. Louis Post Dispatch: Again, this eliminates the need to binge on your snacks. You can have your chips and dip without feeling bad because you are eating the appropriate amount. This cheesy dip topped with sour cream and salsa with a hint of onion sounds so good! I love the sharp cheddar mixed with the other bold, savory flavors.
Meatloaf in a Mug from Taste of Home: Who knew you could microwave a mix of ground beef, oatmeal and ketchup and turn it into meatloaf? Seriously, meatloaf in under 7 minutes. I would suggest using 1% or nonfat milk to shave off about 60 calories or so. If you try this one, let me know how it turns out! (photo credit My Recipes)
Blueberry Flax Microwave Muffin from Spark People: Not only does this have an extra health boost of flaxseed, but it also has a kick of orange zest. Lemon blueberry muffins are so delicious, but I’m excited to try this orange zest and nutmeg combination. Oh and it only takes a minute to cook. That’s not figurative, that’s literal people: 1 minute cook time! Only 160 calories in one muffin and 9 grams of protein! (photo credit here)
“Baked” Oatmeal in a Mug from food and whine: First of all, note the parenthesis around the word “baked.” It’s still a microwave recipe. A fruit packed oatmeal blend of banana and apple, this is too good and simple not to try! I may add a sprinkle or two of Stevia to sweeten the dish up just a bit. This recipe also has flax for extra healthy power.
Chocolate Banana Cake Mug from Snack Girl: There are only 4 ingredients to this recipe and it is only 112 calories! This is going to be a life saver for a nice warm dessert in the fall months. It could use a dollop of peanut butter for yet another flavor. (photo credit here)
