Katie loves creating vegan recipes that are quick, easy and delicious. When she is not at work or in the kitchen, she is chasing around her 4 1/2 year old son or putting in time at the gym! Katie has been a vegan for a little over 2 years. She is proof that it does not take extra time or knowledge to adopt a plant-based lifestyle. Her son is not a vegan, but she still finds plenty of ways to sneak kale into his diet as well!
