Need a really simple and inexpensive dinner for the family? This Skinny Beef Casserole is a favorite of mine! After seeing a similar recipe in Taste of Home, I gave the recipe a makeover to make it healthy and amp up the taste. I love the combination of sweet that the corn and sweet onions add to the spicy flavors of the red pepper and chili powder. Feel free to add in other vegetables, and you could easily substitute chicken for beef as well. Let me know what you think, and please share your own pictures of the dish too!
Ingredients
- 1 1/2 pounds ground sirloin
- 1 cup chopped onion
- 1/4 cup chopped green onion
- 1/2 cup chopped red pepper
- 1/2 cup chopped green pepper
- 3 garlic cloves, minced
- 6 cups cooked whole wheat wide egg noodles
- 1 1/2 cups frozen peas
- 1 15 ounce can tomato sauce
- 1 can cream style corn
- 1 tbsp chili powder
- 1/2 tsp red pepper flakes
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- In a large skillet, cook the sirloin, onions, peppers, and garlic over medium heat until mean is no longer pink. Drain.
- Stir in the remaining ingredients and transfer to a greased 3-3.5 quart baking dish.
- Cover and bake at 350 degrees fro 40 minutes or until heated through and enjoy!
