Chocolate Macaroon Energy Balls

The other day I had a MAJOR craving for macaroons, which is crazy as I haven’t had one for years…and I mean years!! Not able to get this craving out of my head – I did what any sensible clean eater would do, I headed to my kitchen to whip up my own ”healthier” version of this yummy treat. These turned out SO good and DEFINITELY hit the spot, but I am going to warn you …… it is REALLY hard to stop at one!!

Chocolate Macaroon Energy Balls

Yield: 13 balls

Serving Size: 1 ball

Chocolate Macaroon Energy Balls

Ingredients

  • 30 pitted dates
  • 1 cup of raw pecans
  • 1/2 tsp pure vanilla extract
  • 1 scoop of chocolate protein powder
  • 1/4 cup cocoa powder (or raw cacao powder)
  • 1/3 cup shredded unsweetened coconut

Instructions

  1. Place dates in a bowl and cover with water.
  2. Let soak for at least 20 mins.
  3. Drain all water, except for 1tbs.
  4. Put dates and the reserved water in a food processor.
  5. Add 1 cup of pecans and process until combined.
  6. Add in protein powder, cocoa powder, coconut and vanilla, and mix well.
  7. Line a baking sheet with Parchment paper and set aside.
  8. With your hands, roll a small amount of the mixture to form one inch balls.
  9. Place on the prepared baking sheet.

    the Chocolate Macaroon Energy Balls are fantastic! I used vanilla protein power as that’s all I had on hand, and they were still chocolatey and delightful… and even better frozen! mmmmm…
