Skinny Pumpkin Protein Cookies

Ingredients

  • 2 cups white whole wheat flour
  • 2 scoops vanilla protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups old fashioned oats
  • 1 teaspoon pumpkin spice
  • 1 teaspoon cinnamon
  • 1/4 cup pure pumpkin
  • 1 tablespoon vanilla extract
  • 2 eggs
  • 1 egg white
  • 1/2 cup brown sugar (packed)
  • 1/2 cup sucanat
  • 1/4 cup butter
  • 1/2 cup dried cranberries
  • 1/4 cup almonds (chopped)

Instructions

  1. Pre-heat oven to 350 degrees F. In medium bowl, combine flour, protein powder, baking powder, baking soda, oats, pumpkin spice and cinnamon. Set Aside.
  2. In mixer beat butter and sugars until creamy. Add eggs and egg white. Add vanilla and pumpkin until all is combined well.
  3. Half a cup at a time, add flour and oat mixture until all of the flour is absorbed.
  4. Mix in cranberries and chopped almonds if desired.
  5. Scoop batter with a cookie scoop and place 2 inches apart. Bake for 10 minutes.
  6. Allow to cool. Enjoy!
