Ingredients
• Medium head of cauliflower, cut up into florets – OR – one bag frozen cauliflower
• 4 cloves of garlic
• 1/3 cup low-fat buttermilk (you can substitute buttermilk with fat free sour cream)
• 1 TBS light butter
• salt & pepper
Directions:
Boil cauliflower and garlic until soft
Drain WELL, then add buttermilk, butter, salt, and pepper.
Using a hand blender, puree until you reach your desired consistency. (If you do not have a hand blender, a regular blender will work)
