Skinny Manicotti

Ingredients:

• 10 Manicotti Noodles
• 1 TBS Shredded Parmesan Cheese
• 2 cups Sugar Free Pasta Sauce
• 10oz. Frozen Spinach – THAW AND DRAIN
• 1 cup Fat Free Cottage Cheese
• 3/4 cup Shredded Mozzarella
• 1 egg white
• 1/2 tsp. Garlic Powder

Directions:

Cook your manicotti according to the package instructions

Combine parmesan cheese, spinach, cottage cheese, 1/2 cup mozzarella cheese, egg white, and garlic powder in a mixing bowl

Mix well

Scoop mixture into a gallon size ziploc bag and cut one corner off of the corner of the bag

Spread 3/4 cup of sauce in the bottom of a baking dish

Fill each manicotti noodle by squeezing approx. 1/4 cup of the spinach mixture into each noodle. If you can do this without making a mess you may be a super hero. No pictures of this step: One had squeezing bag, One hand holding noodle = no hands for camera.

Place filled manicotti into the baking dish

After all the manicotti are filled, top with the rest of the pasta sauce

Bake COVERED at 400 degreesF for 20 minutes. Remove from oven and top with remaining 1/4 cup of shredded mozzarella

Return to oven and bake for 5 more minutes, or until cheese is melted
