How was your week? I slowly got off of my Halloween sugar-high, and felt better all around by having healthy meals prepared for my family each night. I’m involved in community theater, and we are nearing the opening of our next production, which means I have rehearsal at least 3 nights a week. Being prepared with my meals (not having to figure out WHAT to make, and already having everything I need to make what I planned) allows me to still have dinner at home with my boys even with my tight schedule.
“Meatless” Monday: Skinny Vegetarian Enchiladas
Tuesday: Skinny Chicken Broccoli Casserole
Wednesday: It’s NATIONAL PICKLE DAY!! Yeah, pretty odd. Toss some pickles on Skinny Cheeseburger Pie and call it a party!
Thursday:THANKSGIVING DINNER!
Friday: Bang Bang Shrimp Pasta
Skinny Treat: ok, I have been drooling over this one all week – Skinny Apple Ice Cream with Brandy Caramel
