Skinny Meal Planner: October 8 – October 12

 

Will is sick.  Croup and a double ear infection.  So, of course, I’m tired from consoling him throughout the night.  I got more sleep when he was a newborn.  This week was ROUGH.  BUT, as my not-so-little boy clung to me a 2am (and 3am, and 4am…) I couldn’t help but be overwhelmed by the joy that is mommy-hood.  Even though I’d rather cuddle with him during normal waking hours – I’m cherishing each little mommy moment before they pass by.

1 pound down.  Not so happy about that, but honestly, I’m sorta just happy to be a functioning human being at this point.  Thanks for all of you encouraging comments and messages!

“Meatless” Monday: Slow Cooker Black Bean Chili
Tuesday: Skinny Baked BBQ Pork Chops
Wednesday: Skinny Italian Chicken Pie
Thursday: Skinny Baked Beef Burritos (this MAY be my favorite meal. ever.)
Friday: Pumpkin and Chicken Curry (You pumpkin addicts gotta get this in while they are in season!)
and for a treat this week : Dairy-Free Skinny Cheesecake (This is possible? WHAT?!  Yum!!)

    Teresa, you are my inspiration and your recipes are unbelievable. I personally know how you give 110% to everything you do. First and foremost, you are an incredible mommy to the most incredible little guy in the world. Your ability to multi-task and not just do things half heartedly but to a point of perfection is amazing. I want to be like you when I grow up…if I grow up :) Keep up the awesome work!!!
