I have an obsession with pumpkin in the fall months. This may explain why I have a shelf in my pantry devoted to Libby Canned Pumpkin. A good friend and fitness enthusiast (which is why I knew they had to be healthy) put this recipe up on her Facebook page. It caught my eye immediately, pumpkin and chocolate chips? Yes, please!!! I made them over the weekend and they were delicious!!!!

Ingredients
- 1 cup canned pumpkin
- 1 cup white sugar
- 1/2 cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon milk
- 1 tablespoon vanilla paste (extract will work just fine)
- 2 cups semisweet chocolate chips
Instructions
- . Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt.
- 2. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
- 3. Add vanilla and chocolate chips.
- 4. Drop by spoonful on greased cookie sheet and bake at 350° for approximately 10 minutes or until lightly brown.
















Would you suggest substituting the all-purpose flour, sugar, and vegetable oil for healthy alternatives to make this recipe healthier?
These came out wonderfully! Followed the directions to a “t” and my husband can not keep his hands off of them
Substituted unsweetened applesauce for the oil. 1:1 ratio. They look and smell so good. Waiting a few more minutes for them to cool before I completely demolish them.
