Mini Red Velvet Cupcakes

These cupcakes are a family favorite! With their mini size and their tasty, calorie-saving skinny swaps, they are less than 100 calories for a serving of 3 mini cupcakes! Enjoy :)

Mini Red Velvet Cupcakes

Ingredients

  • Half of a 12.25 ounce box of red velvet cake mix
  • 1/2 cup water
  • 3 Tbsp unsweetened applesauce
  • 1 large egg plus 1 egg white
  • 1 cup marshmallow fluff

Instructions

  1. Preheat oven to 325.
  2. Combine cake mix, water, applesauce, egg, and egg white and beat until smooth.
  3. Spoon batter into wrapper lined mini-muffin pans and bake 15 minutes.
  4. Cool one minute in tins before transferring to a wire rack.
  5. Pipe on fluff with a plastic bag with the corner snipped to add some tasty flare!

    Thank you so much for your recipe! I made it today and enjoyed it! I had to use real cream cheese frosting though but a lighter version. The cupcakes were moist and not too sweet but with the frosting it was just right. Thank you!
