Skinny Meal Planner: Sept.17 – Sept. 21

What a week!  We did it!  As of 8am Friday morning, we no longer own our little home on the hill.  The relief of having packing complete, not having to worry about cleaning for showings or inspections, and not stressing about selling in general – is immense.  The excitement of a new, bigger house for my family to grow into is beginning to kick-in.  All that being said, I still cried as we walked through the empty house one last time.  Bittersweet-ness at it’s finest.  I’ll miss you little house on the hill.

So, now we are living with my mom and dad while out new home is being built.  I never thought I would be so happy to have access to a full kitchen and cooking supplies!  First week back… HERE WE GO!

“Meatless” Monday: Portabella Mushroom Pizza (you will have extra feta from the stuffed chicken on Friday, so use it on these if you like!)
Tuesday: Skinny Honey Mustard Chicken with Skinny Glazed Carrots
Wednesday: Slow Cooker Pork Roast with Vegetables (mid-week slow cooker meals work best for me – gets me over that “hump day”!)
Thursday: Skinny Turkey Meatloaf with Skinny Mashed Cauliflower
Friday: Feta Stuffed Chicken with Wilted Spinach Salad

In addition, I was gifted SEVERAL rather large zucchinis so I’ll be making some Skinny Zucchini Bread this week for sure!

Side note: This is my son, Will.  He is “cooking” while simultaneously on his “phone”. Like mother like son!
