I’ve seen this recipe floating around Pinterest from Weight Watchers and thought I’d give it a try. They were REALLY good – but not as crunchy as I thought they would be. However, as a replacement for the full-of-fat fried chicken, I give them a thumbs up. I altered it slightly (I didn’t have dill or scallions as the original recipe does) but it was a great, easy, fast dish. With three ingredients and 20 minutes, you can’t beat it!
Ingredients:
• cooking spray
• 2/3 cup lite honey mustard dressing (I looked for the brand with the lowest calorie and carb totals – and the name didn’t hurt either
)
• 1 cup cornflake crumbs
• 1 pound uncooked boneless skinless chicken tenderloins
Directions:
Set up your line-up: Chicken, Honey-Mustard in a shallow bowl, Corn Flakes (SLIGHTLY crushed. The bigger the flakes the crispier the coating), a baking dish lightly sprayed with cooking spray.
Dip chicken in dressing, then corn flakes, then place in the baking dish. (FYI – I was doubling the recipe when I photographed this so we would have leftovers!)
Bake at 425°F for 15 minutes or until chicken is golden and no longer pink in center. Drizzle with honey mustard and enjoy!
