Instructions
- Mix together one can of pumpkin and a box of vanilla cake mix together
- Place in paper lined cupcake holders and bake at 350 for 20-25 minutes
- I sprayed the liners with PAM so that the muffins wouldn't stick to it

I change the pumpkin for apple pure and it was verry good

I add one T. of “pumpkin pie” spice. Makes them taste like Panera’s pumpkin muffin.

I had a struggle with these looking a little bit “unbaked”, although they were delicious. Has anyone else had this experience, and do you have a solution?
Caroline, I think that “unbaked” look you are talking about is just the combination of the moist cake mix with the pumpkin. You can always opt for just a regular cake mix and not the super moist kind. They will help. Enjoy!

I just made these. They are a little too sweet for me, but I don’t have a huge sweet tooth. I think I’m going to try this with chocolate cake. Chocolate/pumpkin…. I’ll let you know how they are
Is the carb count whats on the cake box or does it differ when the pumpkin is added?
I made these for a quick treat for the kids. I wasn’t worried really too much about calories but was rather looking for a new pumpkin recipe. Substituted bannana cake mix and threw in about 3/4 cp mini semi sweet choc chips. and still added the pumpkin spice. They are delicious
