This recipe is from my mom. She used to whip this up for us and we would get so excited!! I now make it for my kids and they love it just as much. Using box cake mix and adding a little this and that makes this cake super easy and super fast to whip up. The coolness of the key lime makes for a great Summer dessert.

• 1 Box of yellow cake mix
• 1 3oz box of lemon pudding
• 4 eggs
• 1 cup water
• 1 cup vegetable oil
• 2 tbs of lime juice
• 1 lime

• 2 cups of confectioners sugar
• 1/3 cup of lime juice

Directions:

1. Mix together cake mix, pudding, eggs, water, oil and 2 tbs of lime juice
2. Pour into greased 13×9 baking pan
3. Bake at 350 for 35-40 minutes
4. Remove and let cool
5. In a bowl, mix 2 cups of confectioners sugar with 1/3 cup of lime juice
6. If it’s too thick, add more lime juice
7. With a toothpick poke holes in cake and top with glaze
8. Shave fresh lime zest on top of cake
9. Chill and serve
