Greek Salad with Israeli Couscous

A healthy salad made with  sweet peppers, tomatoes, cucumbers, broccoli, cauliflower, red onion, baby corn, and olives, (pretty much everything, BUT the kitchen sink )  :-) combined with Israeli couscous and tossed with a Greek inspired dressing.

My family eats this salad at least once week. Often topped with  grilled chicken. Here is the  recipe I came up with a few years ago .

Ingredients

  • Dressing
  • • 1/2 cup red-wine vinegar
  • • 3 tbsp extra-virgin olive oil
  • • 3/4 cup crumbled feta cheese
  • • 1 tsp oregano
  • • 1 tsp basil
  • • 1 tsp dijon mustard
  • • 2 tsp minced garlic
  • • sea salt
  • • freshly ground pepper
  • Whisk together all ingredients in a bowl.
  • Ingredients
  • • 1 ¼ cups Israeli Couscous
  • • 2 cups broccoli
  • • 2 cups cauliflower
  • • 1 red pepper chopped
  • • 1 yellow pepper chopped
  • • 3 medium tomatoes, chopped
  • • 1 cucumber, chopped
  • • 1 small red onion chopped
  • • 1 can baby corn pieces drained
  • • 1 can sliced black olives drained
  • • ¼ cup toasted pine nuts ( optional)

Instructions

  1. 1. In a medium pot, bring 1 ¾ cups of water to boil.
  2. 2. Stir in couscous and return to a boil, cover with lid, reduce heat and simmer for 10 mins or until water is fully absorbed.
  3. 3. Meanwhile prepare & chop all vegetables and place in a large bowl.
  4. 4. Once couscous is finished cooking, add to the vegetables and stir to combine, pour over dressing, toss to coat and ENJOY!!
