A healthy salad made with sweet peppers, tomatoes, cucumbers, broccoli, cauliflower, red onion, baby corn, and olives, (pretty much everything, BUT the kitchen sink )
combined with Israeli couscous and tossed with a Greek inspired dressing.
My family eats this salad at least once week. Often topped with grilled chicken. Here is the recipe I came up with a few years ago .
Ingredients
- Dressing
- • 1/2 cup red-wine vinegar
- • 3 tbsp extra-virgin olive oil
- • 3/4 cup crumbled feta cheese
- • 1 tsp oregano
- • 1 tsp basil
- • 1 tsp dijon mustard
- • 2 tsp minced garlic
- • sea salt
- • freshly ground pepper
- Whisk together all ingredients in a bowl.
- Ingredients
- • 1 ¼ cups Israeli Couscous
- • 2 cups broccoli
- • 2 cups cauliflower
- • 1 red pepper chopped
- • 1 yellow pepper chopped
- • 3 medium tomatoes, chopped
- • 1 cucumber, chopped
- • 1 small red onion chopped
- • 1 can baby corn pieces drained
- • 1 can sliced black olives drained
- • ¼ cup toasted pine nuts ( optional)
Instructions
- 1. In a medium pot, bring 1 ¾ cups of water to boil.
- 2. Stir in couscous and return to a boil, cover with lid, reduce heat and simmer for 10 mins or until water is fully absorbed.
- 3. Meanwhile prepare & chop all vegetables and place in a large bowl.
- 4. Once couscous is finished cooking, add to the vegetables and stir to combine, pour over dressing, toss to coat and ENJOY!!
