Every week, I make a batch of these “muffins” for a quick balanced snack on the go.I will normally have two or three at a time with a Tbsp of natural peanut butter smeared on top – yes, eggs with peanut butter – SO yummy, you’ve got to try it!!
¾ cup large flake oats
1 500g carton of egg whites
1 apple chopped
- Spray muffin pan with non stick spray.
- Place 1 Tbs of oats in each muffin, top with apple, cinnamon and pour eggs to cover.
- I like to give it a bit of a stir afterwards to mix the oats throughout.
- Bake in a 375 oven for about 25 mins.
*45 calories with 5 grams of protein in each!!!
