Sweet Jalapeno Salmon

In an effort to cook more fish for dinner, I experimented with some fresh Salmon and fresh Jalapeno peppers to create this delicious Sweet Jalapeno Salmon recipe.  The combination of sweet and spicy complimented the salmon perfectly and I was able to have this dinner on the table in less than 20 minutes!  A great side dish for this recipe is my Jalapeno Brown Rice which is packed with flavor and is perfect as a bed of rice for the salmon.

Servings: 5

1 pound fresh Salmon filets
1/4 cup honey
1/4 cup lime juice
1/4 cup chopped Jalapeno peppers
1 tsp chili powder
1/4 tsp cumin
1/4 tsp black pepper
1/4 tsp salt

In a small saucepan, over medium heat, bring honey, lime juice, and Jalapeno peppers to a boil.  Reduce to low heat and simmer mixture for 10 minutes.
Wash and pat dry Salmon filets.
In a small bowl, add black pepper, chili powder, cumin, and salt.  Use a spoon to mix all spices together.
Rub spice mixture onto both sides of Salmon filets.
Place Salmon filets onto a hot grill pan over medium heat and cook for 4-5 minutes on both sides.
Brush Salmon filets with honey and lime juice mixture several times while cooking.
Pour remaining honey and lime juice mixture over cooked Salmon filets and top with Jalapeno peppers.  Serve with Jalapeno brown rice.
