Skinny Black Bean Quesadillas

Quick, delicious and satisfying!! I love making these because they are not only delicious but healthy too. It’s a great summer meal that satisfies my craving for Quesadillas and is a great vegetarian option as well.

Skinny Black Bean Quesadillas

Ingredients

  • 1 15-ounce can of black beans, rinsed
  • 1/2 cup of shredded Mexican Blend Cheese (low-fat or nonfat can be used)
  • 1/4 cup of fresh cilantro
  • 4 8-inch tortillas (whole wheat)
  • 1/2 cup of fresh salsa
  • 1 ripe avocado, diced
  • 2 teaspoons of corn or canola oil

Instructions

  1. Combine beans, cheese, half of cilantro, and 1/4 cup of salsa in a bowl.
  2. Place tortillas on a large baking sheet or platter.
  3. Spread filling on half of each tortilla.
  4. Fold tortillas in half, pressing to flatten.
  5. Add oil to large frying pan and brown tortillas till cheese it melted, flipping once.
  6. Repeat until all tortillas are golden brown and cheese is melted.
  7. Slice in halves and top with remaining fresh salsa, cilantro, and avocado.

    Delicious! Made this for lunch today, and have plenty to take some for lunch tomorrow. I eliminated the avocado and didn’t top it with anything, and it was still yummy!
