If you are looking for a delicious and filling salad recipe to serve as a meal for the family or take to your next cook-out then you must try my Skinny Grilled Fruit and Chicken Salad. This salad pairs a colorful assortment of fresh fruit with seasoned grilled chicken. I always use my recipe for Skinny Cracker Barrel grilled chicken in this recipe but you could season the grilled chicken in way that you like. I also recommend topping this salad with my homemade Strawberry Balsamic dressing, the dressing just compliments the flavors perfectly, I listed the recipe at the bottom of this post. Enjoy!
Ingredients
- 10-12 ounces romaine lettuce
- 1/2 cup shredded carrots
- 1/4 cup shredded low-fat cheddar cheese
- 1/2 cup blueberries
- 1/2 cup chopped apples
- 1/2 cup sliced strawberries
- 1/2 cup mandarin oranges
- 1lb. grilled chicken tenders
- - Strawberry Balsamic Dressing
- 1 Tbsp Smuckers All Natural Strawberry preserves reduced sugar
- 1 Tbsp Balsamic vinegar
- 3 Tbsp Extra Virgin Olive Oil
- 1/8 tsp salt
- 1/8 tsp pepper
Instructions
- Wash and rinse romaine lettuce and pour into a large salad bowl.
- Top romaine lettuce with all other ingredients leaving out the chicken and mix well.
- After salad is mixed, top with grilled chicken and serve with Strawberry Balsamic dressing.

- Mix all ingredients in a small bowl and whisk together for 1 minute
