Looking for a refreshing beverage to kick off your fourth of July celebration or any Summer gathering. Here are two of my favorites:
Ingredients
- Watermelon Martinis
- 5 Cups of Watermelon Cubes (rind and seeds removed)
- ¾ Cup Lemon Vodka
- 6 Tablespoons Lime Juice3 tablespoons Cointreau or Triple Sec
- 3 Tablespoons Sugar
- Iced Almond Coffee
- This iced coffee recipe is heavy on the milk, and the subtle flavors of the vanilla and almond are not overpowering.
- 2 Cups of Coffee
- 2 Cups of Milk
- 1 teaspoon Vanilla Extract (I prefer to use ½ teaspoon of the Pampered Chef’s Double-Strength Madagascar Bourbon Pure Vanilla Extract)
- ½ teaspoon Almond Extract
- 3 teaspoons Sugar
Instructions
- Watermelon Martinis:
- Place the watermelon in blender.
- Cover; blend until smooth.
- Pour puree into a pitcher and keep very cold, even a little frozen to make it icy.
- For two martinis, add one cup of watermelon puree, ¼ cup of lemon vodka, two tablespoons of lime juice, one tablespoon each of Cointreau and sugar to the blender with three to six ice cubes. Cover; blend until slushy.
- Iced Almond Coffee:
- Combine all the ingredients, serve over ice.
- Makes 4 deliciously, refreshing tall glasses.
