Here is a quick, easy, tasty, and healthy way to use those chicken leftovers… I have used prepared plain chicken, leftover Salsa Chicken, this time I used leftovers from my Slow Cooker Chicken Provencal. This is SO filling I have never been able to finish… so I struggle putting two servings, but you’ll figure it out
Ingredients:
• 2 cups Slow Cooker Provencal Chicken and Beans
• 2 Lo-Carb Tortillas
• 1/2 cup salsa
• 1/2 cup monterey jack cheese, shredded
• 4 c mixed salad greens
Directions:
Lay tortillas on a baking sheet. Warm chicken (microwave works!) and then evenly distribute 1 cup of chicken per tortilla.
Top each tortilla with 1/4 cup of salsa and then 1/4 cup cheese.
Place sheet in oven and heat under your broiler until cheese melts and the edges of your tortilla are toasty.
Top each toasted tortilla with 2 cups of greens and enjoy!
