Mexican Quinoa and Turkey Bowl

What do you get when you mix ground turkey, quinoa, black beans and corn, with southwestern spices?? You get this yummy Mexican Quinoa & Turkey Bowl . Mmmmmm SO good!!

Mexican Quinoa and Turkey Bowl

Ingredients

  • 1 lb lean ground turkey
  • 2 cups quinoa
  • 1 can corn, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, seeded and chopped
  • 1 green pepper, seeded and chopped
  • ¼ cup of fresh cilantro, chopped
  • 2 Tbsp olive oil
  • ¼ cup apple cider vinegar
  • 1 Tbsp cumin
  • 1 Tbsp chili powder
  • 1 Tbsp garlic
  • 2 tsp finely chopped jalapeno pepper
  • sea salt
  • juice of one lime

Instructions

  1. Cook quinoa in water according to package directions.
  2. While cooking quinoa, brown ground turkey and set aside.
  3. Once quinoa and turkey are fully cooked , transfer to a large bowl and add remaining ingredients.
  4. In a separate bowl, whisk together dressing ingredients and stir into quinoa mixture until evenly combined.
  5. GREAT topped with avocado slices

    Thanks for this recipe! I have quinoa at home and I’ve enever prepared it and this looks like a recipe I can actually make! and now I HAVE to make it bc my hubs has recently learned of al the health benefits of quinoa! I really hope I don’t mess it up! I’m still in the “learning” stages of my cooking!
