What do you get when you mix ground turkey, quinoa, black beans and corn, with southwestern spices?? You get this yummy Mexican Quinoa & Turkey Bowl . Mmmmmm SO good!!
Ingredients
- 1 lb lean ground turkey
- 2 cups quinoa
- 1 can corn, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 red bell pepper, seeded and chopped
- 1 green pepper, seeded and chopped
- ¼ cup of fresh cilantro, chopped
- 2 Tbsp olive oil
- ¼ cup apple cider vinegar
- 1 Tbsp cumin
- 1 Tbsp chili powder
- 1 Tbsp garlic
- 2 tsp finely chopped jalapeno pepper
- sea salt
- juice of one lime
Instructions
- Cook quinoa in water according to package directions.
- While cooking quinoa, brown ground turkey and set aside.
- Once quinoa and turkey are fully cooked , transfer to a large bowl and add remaining ingredients.
- In a separate bowl, whisk together dressing ingredients and stir into quinoa mixture until evenly combined.
- GREAT topped with avocado slices

I have quinoa at home and I’ve enever prepared it and this looks like a recipe I can actually make! and now I HAVE to make it bc my hubs has recently learned of al the health benefits of quinoa! I really hope I don’t mess it up! I’m still in the “learning” stages of my cooking!
