Black Bean, Mango, Quinoa Salad

Quinoa, pronounced “Keen-wah”, is such an AMAZING “super grain”……although, it’s not a grain at all, it is an amino acid-rich (protein) seed. This gluten free seed, is a complete protein, containing all 9 essential amino acids that are required by the body as building blocks for muscles. It is also high in magnesium, fiber and a good source of manganese and copper. Quinoa cooks and tastes much like other grains, making it the perfect replacement for grains that are difficult to digest and for people following a gluten free diet.

Here is a recipe for a DELICIOUS and SIMPLE  summer salad, sure to please even the pickiest of eaters!!

** Great as a meal on it’s own or  as a side dish with grilled chicken.

Skinny Black Bean Mango Quinoa Salad

Ingredients

  • 2 cups quinoa
  • 2 mangos, peeled,seeded and chopped
  • 1 can black beans, drained and rinsed
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 sm red onion, chopped
  • 1 small bunch of cilantro, chopped fine
  • 2 Tbsp olive oil
  • juice of 1 lime
  • 1 tsp cumin
  • sea salt

Instructions

  1. Cook quinoa with water according to package directions.
  2. Let cool and transfer to a large bowl.
  3. Add remaining ingredients and stir until combined.
