These carrot cake protein balls are the perfect snack before or after a workout…….actually they are perfect ANYTIME of the day!!
Ingredients
- 1 cup baby carrots
- ½ cup raw walnuts
- 30 pitted dates chopped
- 1/2 cup vanilla protein powder
- 1 Tbs ground cinnamon
- 1 tsp ginger
- 1tsp cloves
- unsweetened, shredded coconut
Instructions
- In a food processor, pulse the carrots until shredded. Remove and set aside.
- Add the walnuts to the processor and pulse until chopped fine.
- Add in chopped dates and pulse until combined (will take a few minutes).
- Next, add in the protein powder, spices and shredded carrots, (leaving out the coconut) and pulse until well mixed.
- Line a baking sheet with parchment paper and set aside.
- Sprinkle about a ½ cup of coconut on a plate.
- This is where things will get messy :-) and you will want to move quickly.......with your hands, roll a small amount of the mixture to form one inch balls.
- Roll each ball into the coconut until completely covered.
- Place on the prepared baking sheet.
- When you are all done rolling the balls, place the baking sheet in the fridge or freezer until hardened. Once hardened (about 30 mins ) place balls in a airtight container and return to the freezer.
- They do not get “rock hard” and are perfect right out of the freezer.

Carrot cake without baking it, well that’s interesting. This cake is already healthy for me then added protein balls to it is quite unique. I’ve just read http://proteinpowder.mercola.com/pure-protein.html articles and the facts about whey protein and possible mixes on food and drinks.
@Lindsey – SO yummy!!…@Sandy, they work out to be about 60 cals each..not heavy at all, definitely a great pre or post workout snack!!
@Manaka, I only use a whey protein powder, which has no artificial sweeteners, and is low carb. Adding in the protein makes this a balanced snack, with healthy fats from the raw walnuts and coconut, carbs from the carrots and dates, protein from the powder…of course the dates also supplies sugar, which makes it a perfect food for pre workout fuel or post workout recovery.

Any thoughts for substitutions for the dates? I don’t have any but would love to make these tonight!

Hi Tracy! You could try dried figs, raisins, or dried apricots…..but, if you could wait until tomorrow and pick up some dates!! Hope you like them!!

Hi Laurn……Natural 100% Whey Gold Standard has no artificial flavors or colors….also Kaizen protein powders, only use stevia to sweeten, with a tiny bit of surclose, about 20mg per 40g…..most Vitamin/supplement stores will carry a “natural” protein powder – and you can find the Kaizen one at most Costco Stores, in the pharmacy section.
