My husband is constantly reminding me that I need to increase my protein to reach my goals. I’m having a rough time finding a protein powder I’ll actually drink. He tells me none are good, they are all gritty, and you “just have to drink em’, drink em’ fast!” Chug them, he does… I however, like to enjoy what I eat, so here came this post about one of the easiest muffin recipes that is absolutely packed with PROTEIN! Being a “REAL” fit mama, I am usually too busy trying to remember if we have enough diapers in the house so I don’t have a specific name for it, it’s a chocolate, banana, protein muffin. And, the recipe is very forgiving and flexible! (I like those kind! less room for error that way!) I’ve included in the photo the basic steps, hope they help!!!
Ingredients
- 1 Cup oatmeal (not instant)
- 2 scoops of chocolate protein
- 2 egg whites
- 1 banana
- 1 TBSP of unsweetened applesauce
- 1 tsp of baking powder
Instructions
- Preheat oven @ 350F
- Mix -Everything goes into 1 bowl.
- Fill each muffin tin halfway up
- Bake for about 12 minutes
