Skinny Turkey Meatloaf

Revamp this American favorite in just 5 easy steps with healthy alternatives like using ground turkey instead of ground beef. The cook-time is a little longer than I usually like, but the super quick prep-time and short ingredient list makes up for it! We love ours with mashed cauliflower on the side, and as leftovers for lunch the next day :)

Ingredients:

• 2lbs Ground Turkey
• 1-pkg Stove Top Stuffing Mix (I choose the savory herb blend)
• 1 Large Egg
• 1/2c. Water
• 1/4c. Ketchup

Directions:

Add all ingredients to a large mixing bowl, but omit 1/8c. of the ketchup

Mix well. To do this I wash my hands, take off my jewelry, and dive right in with both hands. Hey, I’m a mom, I’m not scared of getting a little dirty! haha

Place meat mixture into a glass baking dish and shape into a loaf – make sure there is enough room around edges so that the grease has a place to go while it bakes

Glaze the top with the remaining ketchup

      You can use GF Bread Crumbs and then add Italian seasonings for the flavor – or, one of my friends uses crushed corn flakes for her gluten free meals!
