Ingredients
- • 1 lb. chicken
- • 1/2 cup green or red bell pepper
- • 1 cup light pasta sauce
- • 4 oz mozzarella cheese (1 cup)
- • 1/2 cup Bisquick mix
- • 1 cup milk
- • 1 egg
Instructions
- Cut chicken into bite sized pieces and cook through.
- Dice one half of bell pepper - not too small, you want pizza topping sized pieces not teeny ones (this is exactly how I described it to my husband, aka my veggie chopper). Note: I usually dice up the entire pepper (or more accurately have my husband do this) and savethe other half for a quick mix-in for a recipe later in the week.
- Add chicken, diced peppers, and pasta sauce to a pie plate - mix together and make level
- Top with one cup of shredded mozzarella cheese
- mix Bisquick, milk, and egg in a bowl with a fork or whisk until there are no lumps
- pour Bisquick mixture on top of the ingredients in the pie plate
- Bake at 400°F for 25-30 minutes - let stand for 5 minutes before serving
