Family dinner at my house includes sweet potatoes at least three times a week so I am always looking for new ways to serve up this popular side dish. One of my new favorites is this recipe for Skinny Pineapple Sweet Potatoes. I especially love that I can pop the potatoes in my crock pot in the morning and they are ready to serve with the main course by dinner time. I usually serve this dish alongside grilled barbecue chicken.
Ingredients
- 4-5 medium sweet potatoes, peeled and cut into 1.5 inch pieces
- 3 Tbsp Splenda brown sugar mix
- 2 tsp ground cinnamon
- 1 tsp sea salt
- 1 20 ounce can crushed pineapple (look for reduced sugar or made with real juice)
Instructions
- Place sweet potatoes in the bottom of slow cooker.
- Toss potatoes with Splenda brown sugar, cinnamon, and salt.
- Pour pineapple and juice on top of sweet potatoes.
- Cover and cook for 5-6 hours on low or 3-4 hours on high.
