I am getting ready to have a few friends over for a candle party and it is right around St. Patrick’s Day so I thought I would try out a new cupcake recipe. The cupcakes are lime flavored with a lime cream cheese frosting. Feeling the spirit of St. Patrick’s Day I decided to add green food coloring to the mix and the cupcakes turned out so cute and festive. I also added a few green colored sprinkles to the tops of the cupcakes but I did not count these into the nutrition info.

Skinny St. Patrick’s Day Cupcakes
Ingredients
- Cupcake:
- 2 cups or 1/2 box Pillsbury Classic White Cake Mix
- 1/2 of 12 ounce can Diet Mountain Dew
- 2 Tbsp fresh lime juice
- green food coloring
- Lime Cream Cheese Frosting:
- 4 ounces 1/3 less fat cream cheese, softened
- 1/2 cup powdered sugar
- 1 Tbsp fresh lime juice
Instructions
- Cupcake:
- Preheat oven to 350 degrees. In a medium sized bowl, add cake mix, Diet Mountain Dew, lime juice, and green food coloring. Use as much green food coloring as needed to reach desired green color.
- Mix until smooth. Line a 12 cup muffin tin with cupcake liners or spray with non-stick butter spray.
- Pour cake mix evenly among cups. Bake for 18-22 minutes until cupcakes are golden and toothpick inserted in the center comes out clean.
- Frosting:
- Using an electric mixer, blend all ingredients until smooth. After baked cupcakes have cooled, frost each cupcake with cream cheese frosting.

I’ve never seen an 8 ounce can of diet mt dew … so, are we using half a cup of diet mountain dew (4 ounces) or half of a regular 12 ounce can, which would be 6 ounces? I want to make sure I’m doing it right.
