Skinny Buffalo Chicken Bites

I love anything buffalo chicken flavored and after making this recipe for Skinny Buffalo Chicken Bites, I have found my new go-to appetizer and it has become of my husband’s favorite quick dinner recipes. I always have cooked shredded chicken on hand as I purchase chicken in bulk and cook 4-5 chicken breasts in the slow cooker at the start of the week so this recipe took me less than 10 minutes to put together. Depending on how hot your taste buds are, feel free to modify the amount of hot sauce and the brand.

Skinny Buffalo Chicken Bites

Yield: 8 Servings

Serving size: 3 Bites

Ingredients

  • 4 boneless, skinless, chicken breasts (cooked and shredded)
  • 1 cup hot sauce (I use Frank's Red Hot brand)
  • 4 oz. 1/3 less fat cream cheese
  • 2 wedges of The Laughing Cow Cheese (blue cheese flavored)
  • 1/4 cup chopped scallions
  • 1/2 cup reduced-fat sharp cheddar cheese
  • 2/3 cup Panko bread crumbs
  • 2/3 cup Fiber One Cereal, crushed
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 350 degrees.
  2. Line a cookie sheet with parchment paper.
  3. In a large mixing bowl and using an electric mixer, mix hot sauce, cream cheese, and The Laughing Cow Cheese wedges.
  4. Add shredded chicken, sharp cheddar cheese, and scallions to hot sauce mixture and stir with a spoon until mixed.
  5. Form buffalo chicken mixture into 24 bite size balls.
  6. In a separate bowl, combine Panko bread crumbs, Fiber One cereal, pepper, salt, and garlic powder and mix.
  7. Roll each ball in the bread crumb mixture and place on parchment paper. Spray lightly with cooking spray.
  8. Bake in oven for 20-25 minutes until golden brown.
  9. Remove from oven and enjoy!
